Gayle sent in a dynamite pepperoni ball recipe and this one was fun for the kids. We went the dinner roll route so to avoid some mess, but I look forward to trying this with my honey wheat pizza dough (See No Guilt Pizza Recipe). I used Turkey Pepperoni to make it a little healither. My kids lived these for a snack. Try them as an alternative to the store bought.

Pepperoni Balls:

  • Rhodes white dinner rolls, or homemade pizza dough,
  • pepperoni,
  • olive oil.

Defrost as many of the rolls as you need on a cookie sheet lined with parchment paper.  Allow to defrost and rise to the size of a large egg. ( if using pizza dough just let it rise to the same size, about 45 minutes) In your left hand hold the dough and with your right press 3-4 pcs of Pepperoni into the middle of the dough.  Pull the edges around to seal and return to the parchment.  Repeat for as many balls as you are making.  Cover with plastic wrap that has been sprayed with Pam and allow re-rising for 1-2 hours or until the size of a tennis ball.

Heat oven to 350 degrees.  Bake about 15 minutes or until golden brown,  Remove from oven and drizzle with Olive oil.
